Recently I've created two new ice creams that turned out to be delicious!!! The first one started with a Youtube Video of a Russian-German foodtuber. She had posted a video about how to make a "healthy paste" for some extra vitamin intake during winter season: lots of lemons, ginger, kurkuma, honey and black pepper. After I had grinded up the paste in the food processor it turned out to taste very nice. Then I had the idea to make a plain ice-cream base and add some of the paste while the base is churning in the ice-cream maker. The result is a very refreshing ice-cream with just the right balance of slightly sour, a bit spicy and not overly sweet. The second type is a spekkoek / kua lapis ice cream. Spekkoek as it is called in Dutch is an all time favourite of mine. It's a rare treat because it's not available anyhwhere in Switzerland and I can only get some when I'm in the Netherlands. A spice mixture of cardamom, cinnamon, clove, mace and anise gives the cake its unique taste. Again I made a plain ice-cream base, tossed in the spice mixture and a bit of spekkoek flavoured liqeur with the most fantastic end result. A bit tired of teaching I am now contemplating to keep on experimenting and the open my own ice-cream shop

No idea but this cake was featured on one of the BBC articles about special treats for Ramadan..it looked delicious and there were recipes with it…they called it kek lapis.

These cakes are quite a bit of work because you bake them layer by layer. The one I was talking about is this and apparently called "lapis legit". Never quite sure of the name in Indonesian because we simply call it "spekkoek".

Just found a recipe for rhubarb ice-cream and am now checking what tastes it can be combined with. Haven't tried rhubarb & ginger but it does sound refreshing!

Papaya and Kalamansi lime will be a bit difficult to come by here. But Mango are usually for sale and Mango & Mint sounds good :-)
