Another batch of Croissants will be made. I used a different recipe this time. Only thing, I kinda lost track of time a bit. It is not a big deal as long as you take more time. Speeding up the process is the problem. Hmm. For tomorrow morning I would need to speed it up and for Saturday I need to slow it down. I should try to stick to the schedule. It makes the planing of things more easy.

lol! ah dilemmas of the kitchen. I made way too much filling fo my samosas. but I didn't make the dough for the outside, I bought some "brick" sheets and I didn't have any more. I guess I'll have the left over filling on its own tomorrow.

It is so exciting hearing others making stuff! I made smoked trout wrapped in filo pasty with a sauce from my own yogurt instead of sour cream ,wasabi and dill we grew. I don't have horseradish. Then my own pickled beetroot. Feta we made from scratch...and all the rest. Lost track. I am such a hippy farmer. Oh yes and tiny sun dried tomatoes I dehydrated and marinated in EVOO with garlic and herbs.

When I was in Luang Prabang, I wanted to find out which place had the best croissant, so I systematically set about visiting as many French Pâtisserie as I could in the time that I could ordering a croissant and coffee in each. The one at the top on the right hand side with the little tables and chairs outside made the best croissants! I can still recall the buttery texture and melt in my mouth pastry. Ah.... pure heaven!

i like how in france the price of croissants is regulated there are $5 & $6 croissants stateside i can get a loaf for that
