Asparagus is one of the treats of the new season. Of course it is available all year in supermarkets, flown in from Mexico or Peru, but we don't buy that. We got this when we were in France - big fat white spears. Most of France eats white asparagus (the shoots before they come above ground) though there is an "asparagus line" south of which green asparagus is eaten. Since we were in the north it is white that we bought. We brought back a kilo and had most last night with vinaigrette. Tonight we'll have the rest with some prawns and I'll make mayonnaise.

totally agree about local asparagus! you inspired me to pick up some @ the farmers' market! roasted some & then pureed the stems w milk for a soup

We have the same problem here. I NEVER buy the asparagus from Mexico or Peru. I don't fancy human poo on my food.. is that correct about Mexico? Anyway I'm not buying it. My father was European and always raved on about white asparagus. Not usually seen here. They honestly don't taste as good anyhow as fresh from here.
