This Sunday we have 6 people for lunch and are doing a kind of Pan-Asian thing. here it is:
Appetizer Oysters with Thai chilli dressing Vietnamese (rice wrap) spring rolls with pork and hoisin peanut dip Deep fried prawns in Japanese style breadcrumbs with chilli dip
Starter Clam soup – a bit like a clam chowder but with coconut milk, chilli and loads of herbs (mint, coriander, Thai basil, kaffir lime leaf and lemon grass)
Fish Monkfish, pan fried and coated with roasted onion seeds then served on a southern Indian style fish curry sauce.
Meat Duck – legs and thighs slow roast then finished in Thai red curry sauce with Thai basil. Breasts in sweet chilli sauce and coriander.
Dessert Just some simple tropical fruits like mango, papaya and pineapple.

You would both be very welcome! But things have got off to a difficult start and the day before the lunch we are already was behind schedule. It should have been the whole of today dedicated to shopping for the right fresh ingredients and per-prepping whatever we could. But Mrs H had to work this morning and I ended up going diving for what should have been just the morning but ended up taking most of the day. So now, after starting shopping at 4pm we will be cooking half the night then up early tomorrow to meet the deadline of 1.30 when they arrive.

Well i'm a more that a bot pi55ed as I write this but I was a great day. Amazing wethar, we were all sat out on th eterrace till aroound 7,30 when it got darkish. Oysters were a bot of a let down, did not get the Thai dressing quit right, Vietnamese spring rills and fried prawns went down well. Clam suop was great as was teh fish curry and duck with red curry and for desert we ended doing roast pineaple with a home made lemon ise cream we had made previously. So, one of our gusts and his wife are wine distibutors so they cntribted a a magnum of lovely Champamge that went down great woth the appertisres and a German Auslese desert wine to go with our dessert. he other guest was the executive chef of a nearby hotel. 6h eff,back to work tomorrow...

The best dish of all was the clams and I have to share this as I kind of made up the recipe myself. Works equally well with mussels. For kilo of clams (that would equate to say 2 kilos of mussels due to shell size), fry some onions and garlic in vegetable oils until just soft then add some chopped fresh chilli, a couple of stalks of bruised lemon grass, and a few kaffir lime leaves. Ad about a cup of coconut milk and approx 1 litre of chicken stock. Add a dash of Thai fish sauce and simmer for about an hour to release the flavours. Bring to a fast boil and add the moluscs until they open. Chuck in loads of fresh herbs (I used fresh Thai basil from my garden and coriander) mix around a bit and serve.
