This is a very light yet delicious item if you know how to make it. I buy a flaky pie crust at the supermarket (pâte feuilletée) and poke it everywhere with a fork. It rises in a 220° oven for about 5-10 minutes. Then I add the ingredients -- chopped leeks and onions cooked in butter and olive oil. Another ten minutes in the oven, and it looks like this. (I sprinkled a little parmesan on top.) Frankly, it is quite delicious.

do you put something on your dough when you cook it first, to avoid it puffing too much ?

This looks very nice? When I make something like this I like to pour some cream & egg mixture on top.
