Courgette Crumble
700 g courgettes 2 tbs olive oil 3 garlic cloves, crushed 2 chillis, chopped 60 g butter 120 g flour 40 g grated parmesan 40 g breadcrumbs s & p
Heat oven to 200C
Cut courgettes in 4 lengthwise, then into small bits.
Put olive oil in frying pan. Add courgette pieces, crushed garlic, chopped chillis, s & p. Cook on a lowish heat for 10 minutes to drive off some moisture. Transfer courgette bits to a baking dish.
In a bowl mix together flour and butter with you fingers. Add grated parmesan and mix. Finally add the breadcrumbs and mix until you have a crumble consistency. Lay on top of the courgettes.
Cook in oven for 20 minutes (or a bit longer). The top should look golden brown.
