I'm sure I;ve posted this before, but it's SO good it bears repeating ! Shaker Lemon Pie 2/2/4 -- that's the recipe - you will never forget it 2 large lemons 2 Cups of sugar 4 eggs ( and crust for a 2 crust pie ) Slice the lemons thinly ( I use a mandoline over a plate to be sure to catch all the juice ) get rid of the pits - and cut the slices into smaller bits put the slices and all the juice into a bowl with the sugar.... macerate for a least a couple of hours if not over night - stir often Preheat oven to 450 Beat eggs well - add to lemon/sugar - pour into bottom crust - put the top on ( cut some vent holes) bake - turn down oven to 350 after 10 minutes.... bake til nicely browned the result is lemon slices in lemon curd !

I just made lemon curd yesterday.. so it will be a while but I will make it in the near future.
