Four or five years ago Mrs Faz got really ill and was confined to bed. Her stomach was the problem. She was seriously losing weight. Doctors were no help. So she began eliminating various foods from her diet. The problem seemed to be gluten and lactose. She stopped eating those. Her problems went away. So she (and naturally me to a lesser extent) followed this regime. It was particulary onerous when travelling in Western countries - think a pit stop in Italy and not being able to eat pizza or panini or pasta.
A short while ago one of her daughters gave her an intolerance test. Before taking the test you have to revert to a normal diet for 6 weeks. She did and had no pain or diarrhea. She then went ahead with the test. It showed she had no intolerance to wheat or milk products. In fact her only intolerance was to egg yolk (and she has never really liked eggs).
All we can think is that all those years ago she had some illness unrelated to dairy or gluten and that cutting those out was just coincidental with getting better.
Since getting the go-ahead last week she has been gorging on cheese and normal bread. You should see her smile.

However, I would recommend she eats "posh" bread, pasta made with 100% durum wheat and only allows for a few "naughty" things per week.
I was told that Italy has the highest ratio of people suffering from gluten intolerance and most places should have gluten-free options.
Also, many people initially feel better when cutting wheat or dairy, because they pay more attention to the food they eat, get more vegetables in, etc...
