One of my migrant mob as I have to myself knicknamed them is in trouble. Badly concussed and will be off work for probably another 4 weeks. Solo, has a freezer and microwave and lives in what would have been called single men's quarters. Lived off tinned soup for the past two weeks.. which is better than nothing but is now bored. Can't concentrate long enough to actually cook. I've dropped off a few basic frozen meat and veg meals which have been appreciated but I realize are very simple. Suggestions or links appreciated..oh and the only food on the not enjoyed but will tolerate is pasta..which nixed my lasagna recipe. oh and it's really cold here at the moment. Guess I'm tired and just need some simple perhaps slow cooker recipes I can small bulk deal with around work hours. All thoughts appreciated.

How about a stir fry with rice? Or a curry with rice. Can make the curry creamy rather than spicy. My helper makes something she calls Thai curry that is like a stir fry but with a creamy citrus sauce which is quite nice.
You could even pre-slice some cheese, tomato etc for him to make a toasted sandwich if there is a jaffle iron.
Burritos or quesidillas are also good. Won't be crispy heated in the microwave but still nice.

Would he have the energy for cooking scrambled eggs - could add grated cheese, onion, tomato...

If you would like some simple recipes, let me know. I still use some recipes from my baby weaning book as they are genuinely tasty and also easy to make.

Thanks lumi. I've found a Thai chicken such as you described and a satay that looks simple and will give a bit more variety to my basic meat casseroles. I grew up in a meat and three veg family so not very experimental with cooking.

Kiwilady, first and foremost sorry... when I read your OP yesterday, I went on a hunt on this forum and then promptly forgot to come back with my findings.
So, do you still have your slow cooker? or did you recently purchase an air-fryer?
When it's really cold, the only things that warm me are hearty soups and stews.
warming spices are cinnamon, ginger, pepper, etc... so if the migrant mob guy is into exotic stuff, maybe add some spice?
