We are still at my daughter's house. There was a knock at the front door and a neighbour handed over two large parasol mushrooms. My daughter has declined them so the said mushrooms will make the journey to Chipping Sodbury tomorrow.
That reminds me of a couple of decades ago in France when my cousin called out urgently to sop the car. He had spotted parasol mushrooms. He gathered several and then doubt crept in. No matter. This was France and you can take your foraged mushrooms to any pharmacy and they will identify them. Good, I said, we shall have for dinner this evening. The pharmacist looked worried. It's all right, I reassured him, we are having a starter of Bayonne jam, veal escalopes with the parasol mushrooms, roquefort cheese and eclairs. He nodded and smiled. This is rural France where they not only identify your mushrooms but approve your menu.

mushrooms should be eaten quickly after being picked. When people leave them in their fridge for a while, especially if they weren't picked at perfect timing, i.e. a little late, they could develop spores and people eating them could get reactions they wouldn't get with fresh mushrooms.

We are eating them tonight, 24 hours after they were picked. I hope that is all right oyherwise this is a farewell message.
More about my cousin. He was a fanatic about mushrooms. He did a Russian course at university. As part of his degree he spent a year in Moscow. He bought some mushrooms from a peasant woman - and ended up in hospital.

I dipped the parasol mushrooms in beaten egg then in breadcrumbs with parmesan and fried them in olive oil.
