This might prove useful, Baz, for future desserts.
First of all, I wish to say that I haven't tried it for myself yet, however, I intend to in the near future.
this is what the author of the book says is a basic recipe and further on, she says for a tarte for 8 people to use a third of this recipe that I'm about to detail:
240g butter (not a typo) 4g salt 180g icing sugar 1 vanilla pod 470g of a basic flour mix (gluten free, I can find it in the book and tell you what the author uses) 60g of what she terms almond powder 2 eggs the zest of 1 lemon
stage 1: soften the butter place the softened butter in the bowl of your kitchen robot, then add salt, sugar and the seeds of the vanilla pod. she explains about working the kitchen robot (or however you call those things) to start delicately.
once the ingredients start to attach to each other, add the flour, almond powder, then up the speed of the kitchen appliance.
stage 2: break the eggs in a bowl (separate), then delicately add them to the kitchen appliance, once incorporated, add the lemon zest
once the dough starts forming, up the speed of the kitchen appliance again, until a dough of a "nice consistency" is obtained.
stage 3: put the dough on a sheet of cling film, make it a vaguely cubic shape before wrapping it in the cling film and putting in the fridge for 30 minutes.
after the dough has rested, flour the work surface and push the dough slightly for 2 minutes, then roll the dough out using a rolling pin, following the recipe you wish to create.
