Have any of you attempted to make a tajine without a tajine dish?
A very good friend of mine loves North African and particularly Moroccan food and culture.
In order to cheer her up, I'm planning to invite her to my place for a meal. With safety measures in place.
I love tajine, but left my tajine dish in the UK.
If not that, what else can I cook for her?

If she eats chicken, there are many chicken dishes with Moroccan spices .. that with rice or fresh flat bread would work.

a tajine is designed to cook a stew on a small charcoal fire with the top condensing the evaporated steam and returning it to the pot... a slow cooker or a pot with a tight lid would be just fine... it is the long, slow, moist cooking that is the goal...

I miss my slow cooker, too... hmmm... there might be a way.... you both gave me food for thought.
