Somehow or other I have been nominated to make the Christmas Cake and Christmas Pudding for this year. Cake - not a major but pudding is. Only my SonInLaw and I will eat it. I love him to bits and he is so generous, if he asks me to do anything I'll turn myself inside out to do it - and the supermarket brought ones would seem like a cop out.
Next problem. Christmas dinner is midday... semi tropical isolated island 2 hours chopper flight from the mainland. Limited kitchen facilities and off grid so limited freezing and fridge facilities, not enough power to run a microwave, and not practical to do the 'cook for 8 hours' and reheat on the day scenario, but could probably reheat slices on the BBQ on the day. As I don't fly up until the 22nd and we go to the island on the 24th I'd need to make it down here the week before (got a big birthday party to go to up there on the 23rd so can't cook it there)
Would appreciate links or recipes for relatively small but traditional Christmas Puddings that would cope with the delay before being eaten without being frozen.
PS. Plenty of alcoholic preserving fluid is available.

i always think of a rum fruitcake - which is virtually indestructible... and possibly inedible, too

Just call me lazy, cheat and fibber. Took the easy way out and ordered a super duper special in a tin online!. Made the cake but it has a dip in the middle which makes it just perfect for an extra dollop of icing
