I wandered round the market in Catania after breakfast, just trying to get used to the challenge of buying and cooking in Sicily. On one stall I came across cedri (plural of cedro). This looks like a vast lemon with skin like an old alcoholic's nose. I went back to the pasticceria where I had had breakfast and my waiter friend informed me that I ate it sliced thin with salt. So back at my guesthouse I have done a bit of research. A cedro is definitely distinct from the usual lemon. The white pith is incredibly thick and that is what you want for a salad (I am not going to be making candied peel). I saw a Jamie Oliver video which was helpful. I shall definitely be experimenting and reporting. Any Potter had personal experience of a cedro?

in english it is known as citron and is one of the primary citrus fruits... it is so ancient that it arrived in israel in biblical times and is known in hebrew as 'etrog'... it plays a major role in the religious rites for the festival of booths... and yes, after the festival people do candy the peel...
