Mrs Faz loves aubergines. I am in trouble if a week passes without aubergine appearing on her plate. Any recipes would be welcome.
Tonight I am going to cook slices of aubergine on the griddle. When cooked, top them with some thick cream (I want to use up the pot). Then put on a sauce made of harissa, pomegranate molasses, lemon juice and coconut powder. Finally top everything with some crushed peanuts.
I hope Mrs Faz can taste the aubergine loaded with all that.

We like a simple dish of grilled fish with grilled eggplant. Or a grilled eggplant and feta 'sandwich'. I've also done a layered eggplant and mozzarella dish in the oven.

I hope Mrz Faz liked it, Baz. It sounds so delicious! I normally just grill eggplant with olive oil or roast it, scoop out the flesh, mash and mix in olive oil. I do also throw it into pasta sauce or stir frys but that isn't the best use of it.

I love aubergines, too!
at this time of year seldom a week passes without a whole baked/grilled aubergine is enjoyed in this house.
As for recipes... I turn to Mediterranean or Indian cuisines for inspiration.
melitzanasalata, aubergine baked with tomatoes, various brinjal curries... (the latter are no doubt in Mrs Faz's repertoire)

Maybe everything cancelled everything out. I am going to have to do some experimenting.

What worries me is when the recipe says to toss the rice into the pan of boiling water. I find it goes all over the cooker.

Tzarine, I have been practising throwing it over my shoulder. I have found this works best if I boil the rice first then get people to stand behind me with their mouths open.
