A friend of Mr Gringa's just opened a restaurant in Puerto Varas. Actually it is his second restaurant, he had a different concept before but he shut that down and started this new one. I had not met him before, but he was on a reality show once that showed the restaurant.
We showed up without any advance notice not sure quite what to expect since it is a new place. It turned out being one of the best meals I can remember having.
It is kind of an interesting place. The kitchen is all open so you can see him and the assistant chefs working. There is no menu, he prepares things based on what is in season and his mood, although he asks if anyone has any allergies or foods they dislike. There weren't many people that day, just me, Mr. gringa, another friend that was in the area travelling to, a Canadian couple and a Chilean couple, so he had us all sit along the bar so he could talk with us and explain what he was preparing.
He did a tasting menu, which has a minimum of 4 courses, we chose 5 courses. Each came with a different wine and of course there was pisco sour to start. The first course was a trout ceviche with both lemon and orange juices:
Then we had a veggie course of spinach, asparagus and mushrooms topped with goat cheese:
That was followed by risotto with waygu beef. I don't even care that much for risotto usually, but this risotto was amazing:
Fourth course was lamb and potatoes from Chiloé:
And here he is making lemon sorbet for the dessert course:
2 and a half hours later, we rolled out of there! Sorry the picture quality kind of declines toward the end, I am blaming it on the many glasses of wine.
